Tasting

Colour
The colour reveals a pale yellow hue enhanced by delicate green highlights.

Nose
The aromatic bouquet opens with subtle notes of white flowers and citrus fruits reminiscent of mandarin, underpinned by a mineral backbone characteristic of its limestone terroir.

Palate
The attack is powerful and concentrated, offering a lovely fleshy richness. The palate then evolves towards remarkable energy, carried by an almost saline minerality that balances the unctuousness. The finish lingers with great length and fine complexity.

Food and Wine Pairing

This great white wine pairs beautifully with refined dishes such as foie gras, caviar, lobster or langoustines. It also enhances free-range poultry or veal served with a cream sauce, as well as firm-fleshed fish such as monkfish. As for cheese, a matured Comté would be an ideal choice.

Service and Storage

For optimal tasting, this Bâtard-Montrachet 2024 is best served at a temperature of between 12 and 14°C. This wine, built for ageing, can be enjoyed from 2025, but will continue to develop favourably in the cellar to be enjoyed until around 2044.

The Purity and Minerality of a Grand Cru from Burgundy

The Estate

Founded in 1885, Domaine Henri Boillot is a key figure in Burgundy, France. Located in Meursault, the estate spans a vineyard of 15 to 19 hectares spread across prestigious appellations. Today, the estate is run by Henri Boillot, who devotes himself exclusively to crafting white wines with a philosophy centred on tension, while his son Guillaume oversees the production of the red wines. The estate is distinguished by its non-interventionist approach and its determination to let each terroir express itself fully.

The Vineyard

The Bâtard-Montrachet plot covers 0.32 hectares at the heart of the appellation. Facing south-east, the vines grow at an altitude of between 230 and 280 metres on soils composed of brown limestone and clay. The vineyard is cultivated according to the principles of sustainable farming, with regular soil tillage and no use of herbicides. Planting density stands at 10,000 vines per hectare, with a strict commitment to limiting yields in order to promote grape concentration through early manual harvesting.

The Vintage

The 2024 vintage benefited from a complete growing cycle and favourable weather conditions, following on from the meteorological challenges encountered the previous year. These conditions allowed optimal ripeness to be achieved while preserving the freshness of the grapes.

Winemaking and Aging

The making of the Bâtard-Montrachet 2024 begins with gentle whole-cluster pressing to prevent any oxidation. Fermentation starts naturally thanks to the autumn temperatures, without thermal control. Ageing then takes place over around 18 months in French oak barrels with a capacity of 350 litres, 60% of which are new. The process involves minimal intervention, with no bâtonnage whatsoever, using only topping up to preserve the purity of the wine.
