Tasting
Colour
The wine displays a beautiful ruby hue of medium intensity.
Nose
The bouquet shows great purity, opening with aromas of red and black fruits such as raspberry, black cherry and wild blueberry. It is enriched by delicate floral notes of violet and peony, warm spices and a very pronounced mineral, saline signature, recalling oyster shell and subtle smoky touches.
Palate
Velvety and multidimensional, the palate charms with its silky texture, supported by exceptionally fine tannins. Beautifully concentrated, it shows a harmonious balance thanks to a fine acidity that carries the wine through to a long, resonant and deeply saline finish.
Food and wine pairing
This cuvée is an ideal match for roast poultry such as guinea fowl à l'orange or stuffed capon, as well as lighter red meats like beef fillet. It will also pair well with suckling pig, feathered game, or dishes in mushroom and truffle sauces, before moving on to aged cheeses.
Serving and ageing
To appreciate the full complexity of this wine, serve it at 16–17°C, taking care to decant it at least one hour before tasting. Built for ageing, this vin de garde will continue to develop in the cellar for around ten years.
The mineral elegance and depth of a Morgon wine
The estate
Based in Villié-Morgon in the heart of Beaujolais, Domaine Louis Claude Desvignes is a benchmark estate whose winegrowing roots date back to 1712. Today, Claude-Emmanuelle and Louis-Benoît Desvignes, the eighth generation, run this 14.5-hectare family property devoted exclusively to the Morgon appellation. True to a philosophy of minimal intervention and certified organic, the estate stands out for its longstanding refusal to produce primeur wines, favouring instead single-plot cuvées built for ageing that express the full complexity of their terroirs with remarkable precision.
The vineyard
This Morgon comes from a unique 0.57-hectare micro-plot in the heart of the renowned Côte du Py, in the Javernières sector. Facing south-east, the very old vines, planted in 1931, thrive on deep soils of clay, schist, pyrite and decomposed volcanic rock, particularly rich in iron oxides. Farmed according to certified organic principles, this densely planted terroir yields naturally low crops, producing grapes of remarkable concentration and depth.
Winemaking and ageing
The grapes are harvested by hand and rigorously sorted. In keeping with the estate's low-intervention approach, vinification takes place largely with whole bunches in concrete vats, using only indigenous yeasts. The wine is then aged for around ten months in a 30-hectolitre concrete egg. The complete absence of new oak barrels allows for gentle micro-oxygenation, preserving the vibrancy of the fruit and the mineral purity of the terroir.
