The Estate
Founded in 1997 by Nicolas Rossignol, a fifth-generation winegrower in Volnay, Domaine Nicolas Rossignol now spans 17 hectares in Burgundy. After gaining international experience in South Africa and in various French wine regions, Nicolas Rossignol developed a terroir-respectful approach, following biodynamic principles. In 2011, the Rossignol-Jeanniard family estate merged with Domaine Nicolas Rossignol, consolidating production under a single entity. Nicolas Rossignol currently runs the estate, producing wines across nearly 30 different appellations of the Côte de Beaune, celebrated for their elegance and faithful expression of Burgundian terroirs.
The Vineyard
The Beaune 1er Cru "Les Reversées" comes from a parcel located on Beaune’s southern slopes, at a relatively low altitude where the soils are made up of clay-limestone earth with gravel elements. The southeast exposure allows the grapes to ripen evenly while preserving freshness. These limestone soils rich in clay and gravel give the wine its signature chalky minerality and balanced structure.
The Vintage
The 2018 vintage in Burgundy was marked by a wet winter followed by an exceptionally hot summer with a significant heatwave. These conditions considerably accelerated grape ripening and increased fruit concentration. The extreme heat posed a challenge for winegrowers, who had to preserve freshness and balance in the wines despite the vintage’s power.
Vinification and Aging
The Beaune 1er Cru "Les Reversées" 2018 grapes are harvested exclusively by hand, placed in small eight-kilogram crates to prevent crushing. After double sorting, mechanical then manual, the grapes are vinified with indigenous yeasts. Fermentation lasts between six and eight days, with daily punch-downs or pump-overs adjusted according to tastings. The wine is then aged for 10 to 20 months in oak barrels, with a maximum of 50% new oak, on fine lees without racking. Malolactic fermentation is deliberately delayed by around six months. The wine is bottled without fining or filtration, in keeping with the principles of the lunar calendar.
