Tasting
Colour
Deep, the colour reveals a beautiful ruby hue and a seductive opacity, with no trace of evolution in its highlights.
Nose
Wonderfully precise, the bouquet reveals elegant aromas of plum, redcurrant and blackcurrant, harmoniously blended with floral notes of violet as well as a mineral, earthy touch.
Palate
The attack is refined and gives way to an elegant, well-structured palate carried by aromas of black cherry, wild strawberry, herbes de Provence and white pepper. Supported by refreshing acidity and silky tannins, the finish lingers on beautiful spiced notes.
Food and wine pairing
This red wine from France pairs wonderfully with traditional dishes such as beef bourguignon, filet mignon with mushrooms, or white meats such as roast veal. It will also enhance roasted poultry, game in sauce, as well as characterful cheeses like Époisses.
Service and storage
For an optimal tasting experience of the Beaune 1er Cru "Reversées" 2022, it is recommended to serve it at a temperature of 15 to 16°C, taking care to decant it one to two hours beforehand. Approachable in its youth, this wine also has a beautiful structure that will allow it to age favourably in the cellar until around 2037.

The estate
Founded in 1997 with just three hectares of vines, Domaine Nicolas Rossignol is today an essential name in Burgundy. Located in Beaune, the estate now spans around twenty hectares across prestigious appellations. Representing the fifth generation of winemakers in his family, Nicolas Rossignol, the current owner, runs the estate with a philosophy inspired by biodynamics. Equipped with a modern cellar built in 2016, the estate stands out for its respectful approach to its terroirs, producing wines renowned for their precision and their faithfulness to their origins.
The vineyard
The Reversées climat is located in the south-eastern part of the Beaune appellation, at the foot of the hillside. This terroir benefits from excellent sun exposure in the afternoon and evening. The soils are made up of limestone with a notable presence of clay and gravel in the lower section, offering controlled yields of around 35 hectolitres per hectare. The estate prohibits the use of synthetic herbicides here, favouring mechanical soil work and cover cropping to promote the vine's vitality.
The vintage
The year 2022 was marked by particularly high sunshine and temperatures throughout the growing cycle, from April to September. Ideal flowering allowed for a good grape yield. The vines then benefited from timely rainfall at the end of June, thus avoiding water stress. These favourable weather conditions led to a healthy harvest, providing berries at optimal ripeness.
Winemaking and aging
The grapes for the Beaune 1er Cru "Reversées" 2022 are hand-harvested into small crates. After a rigorous double sorting, on a vibrating table then by hand, the grapes are mostly destemmed. Fermentation begins naturally in stainless steel vats thanks to indigenous yeasts, accompanied by gentle pump-overs. The wine is then aged on fine lees for twelve to eighteen months in oak barrels, with a maximum of 50% new wood. Malolactic fermentation is deliberately delayed until spring. Bottling is carried out without fining or filtration.
