The estate
Founded in 1997 by Nicolas Rossignol, the fifth generation of winegrowers in Volnay, Domaine Nicolas Rossignol now spans around 17 hectares across several prestigious appellations of the Côte de Beaune. After broadening his experience with renowned estates in Burgundy, the Rhône Valley, and South Africa, Nicolas Rossignol developed an environmentally respectful approach to viticulture, farming his vines according to biodynamic principles. Based in Beaune since 2011, the estate quickly established itself as a benchmark for the new generation of Burgundian winegrowers, recognized for the elegance and precision of its wines.
The vineyard
The Climat Les Noizons lies on the northern slope of the Pommard appellation, benefiting from a particularly favorable full south exposure. The vines grow on clay-limestone soils enriched with iron oxide, which lends a distinctive reddish hue, along with dolomitic limestone that provides magnesium and calcium. This complex geological composition ensures excellent drainage while offering diverse mineral nourishment that influences the structure and aromatic complexity of the wines. The parcels are farmed according to biodynamic viticulture principles, with light mechanical soil work and the complete exclusion of chemical herbicides.
The vintage
The 2020 vintage in Burgundy was marked by an exceptionally early growing cycle. After a winter that replenished water reserves, a particularly fine spring encouraged a very early start to vine growth. Summer brought high temperatures with heat spells punctuated by cooler nights, allowing the grapes to ripen gradually. The absence of major climatic damage and the sunny conditions in September enabled early harvesting—among the earliest ever recorded—yielding grapes with fine ripeness and remarkable balance.
Vinification and aging
The grapes for Pommard Village "Les Noizons" 2020 are harvested by hand and placed in small 8-kilogram crates to preserve their integrity. After careful sorting on a table, the bunches are destemmed and then transferred by gravity to the fermentation vats. Vinification is carried out with native yeasts, with alcoholic fermentation lasting six to eight days under precise temperature control. Punch-downs and pump-overs are adapted to the characteristics of the vintage. After draining, the wine is transferred by gravity into oak barrels for aging of ten to twenty months on fine lees, without racking. The proportion of new barrels is adjusted according to the vintage. Malolactic fermentation is deliberately delayed and begins around six months after alcoholic fermentation. The wine is bottled without filtration or fining.
