An elegant, structured Burgundy wine from Domaine Nicolas Rossignol
The estate
Founded in 1997 by Nicolas Rossignol, a fifth-generation winegrower in Volnay, the Domaine Nicolas Rossignol now spans 17 hectares across nearly 30 appellations in the Côte de Beaune in Burgundy. After merging in 2011 with the family estate Rossignol-Jeanniard, Nicolas Rossignol has run the domaine with a philosophy centered on sustainable viticulture moving toward biodynamics and a low-intervention approach to winemaking. The estate stands out for its respect for terroirs and its determination to express the singularity of each parcel.
The vineyard
The Pommard Village "Les Noizons" comes from a lieu-dit located high on the slope within the Pommard appellation. The clay-limestone soils enriched with iron oxide give the wine a distinctive, attractive minerality. This elevated position promotes optimal ripening of the grapes while preserving the freshness essential to the wine’s elegance. The vineyard is managed according to sustainable viticulture principles, without chemical herbicides, with mechanical soil cultivation and particular attention paid to the balance of the vine.
The vintage
The 2021 vintage in Burgundy was marked by contrasting weather conditions. After a mild winter, spring brought early frosts followed by a cool, damp period during the summer. Despite these challenges, the harvest took place in good conditions in September. This vintage is defined by its natural freshness and elegance, producing wines of great finesse with delicate tannins and a fine aromatic expression.
Winemaking and aging
The grapes for the Pommard Village "Les Noizons" 2021 are harvested by hand and carefully sorted. Fermentation is carried out with indigenous yeasts, favoring gentle extraction to preserve the finesse of the fruit. Alcoholic fermentation lasts between 6 and 8 days, followed by aging in French oak barrels for 10 to 20 months on fine lees, without racking. The proportion of new oak is adjusted to the character of the vintage. The wine is neither fined nor filtered before bottling, thus preserving all its aromatic complexity.
