The estate

Domaine Simon-Paul Canarelli is located in Bonifacio, in the south of Corsica. Its owner and manager, Simon-Paul Canarelli, launched this project by clearing a limestone plateau, before planting the vines and building the winery.

The vineyard

This Sutta Rocca 2025 comes from the limestone plateau of Bonifacio, in the IGP Île de Beauté. The vines occupy a coastal, wind-exposed site. They stretch out among wild olive trees and baracuns, the traditional dry-stone huts.

Winemaking and ageing

The grapes are harvested by hand. This Sutta Rocca 2025 is vinified exclusively with indigenous yeasts in the estate's recently built winery.
