Tasting

Color

The wine displays a deep red hue with violet highlights.

Nose

The nose reveals a remarkable concentration of dark fruits, notably blackberry and black cherry, accompanied by notes of graphite and delicate spices. Floral and mineral touches complete this complex bouquet.

On the palate, this wine charms with its velvety texture and silky tannins. A lovely freshness is paired with a mineral tension that carries across the palate through to a long, complex finish. The overall impression combines power and elegance with remarkable precision.

Food and wine pairing

This Pingus 2023 pairs perfectly with roast pigeon served with a rich jus, hare stew, or a Provençal beef stew. It also enhances herb-roasted lamb with aromatic herbs such as rosemary and thyme, as well as cuts of aged beef such as a rib steak or a grilled steak.

Serving and aging

Pingus 2023 is best enjoyed at a temperature between 16 and 18°C. This wine has exceptional aging potential of around 20 years or more.

The estate

Founded in 1995 by Danish winemaker Peter Sisseck, Dominio de Pingus has established itself as one of the world’s most prestigious estates, revolutionizing Ribera del Duero. This outstanding vineyard is located in Castile and León. The estate, Spain’s first “garage wine,” farms 4 hectares of old, ungrafted tempranillo vines on the San Cristobal plot. Peter Sisseck practices rigorous biodynamic viticulture with exceptionally low yields. Immediate recognition from Robert Parker from the very first vintage propelled Pingus to cult-wine status.

The vineyard

Pingus’ vineyard is located on the San Cristobal plot within the Ribera del Duero appellation. Planted in 1929, the tempranillo vines thrive at 900 meters above sea level on clay-limestone soils. These old, ungrafted vines are farmed biodynamically and produce very low yields—an average of 11 hectoliters per hectare—ensuring exceptional concentration.

Winemaking and aging

The winemaking of Pingus 2023 follows a natural approach, with spontaneous fermentation and no added yeasts. Aging takes place in new French oak barrels from the Darnajou cooperage, allowing this Spanish wine to develop complexity while preserving the purity of the fruit and the expression of the terroir.
