Tasting
Color
The color reveals a deep ruby-red hue.
Nose
The nose opens with intense black-fruit aromas of blackcurrant, blackberry, and cherry. Notes of sweet spices, licorice, and violet round out this expressive bouquet.
Palate
The attack is supple and fresh, carried by well-balanced acidity. Fine, silky tannins provide an elegant texture, never heavy. Black fruits dominate the palate, alongside hints of pepper and graphite. The finish is long and vibrant.
Food and Wine Pairings
This PSI 2023 pairs perfectly with duck with peppers, Galician beef sirloin cooked over vine shoots, or roasted lamb shoulder.
Serving and Cellaring
PSI 2023 from Dominio de Pingus is best enjoyed at a temperature between 16 and 18°C. This wine can be cellared until around 2035.
An elegant, vibrant Tempranillo from Ribera del Duero
The estate
Founded in 1995 by Danish oenologist Peter Sisseck, Dominio de Pingus has established itself as a leading reference in Ribera del Duero in Castille-León. The estate cultivates its pre-phylloxera vines according to biodynamic principles on an exceptional clay-limestone terroir located between 800 and 950 meters above sea level. From its very first vintage, this Spanish estate earned worldwide recognition. Peter Sisseck favors an ultra-selective, artisanal approach, producing wines in limited quantities where quality takes precedence over quantity.
The vineyard
PSI comes from 630 different plots located within the Ribera del Duero appellation. The very old vines are planted on clay-limestone soils at an altitude between 850 and 950 meters. These conditions allow Tempranillo and Grenache to express themselves with finesse and freshness.
Vinification and aging
PSI 2023 from Dominio de Pingus is vinified in concrete vats. This Castille-León wine is aged in large oak casks and partly in new barrels.
