Description
Characteristics and Tasting Tips for the Bourgogne Côte d'Or "Les Louères" 2025 by Jean-Charles Fagot
Tasting
Colour
This white wine displays a pale yellow hue with golden highlights, a sign of a Chardonnay still marked by its youth.
Nose
The nose opens with fresh citrus notes, led by lemon and grapefruit, accompanied by white flowers and a hint of fresh butter. A mineral touch evoking chalk completes this aromatic picture.
Palate
The attack is lively, driven by a distinct acidic tension that structures the whole. The creamy texture brings volume and a lovely balance between freshness and indulgence, leading to a long, saline finish that recalls the limestone imprint of the terroir.
Food and Wine Pairing
This Bourgogne Côte d'Or pairs beautifully with a seafood or crayfish gratin, poultry in a creamy sauce or with mature cheese, as well as Burgundy snails. It also lends itself to grilled fish or white meats cooked over a wood fire.
Serving and Cellaring
The Bourgogne Côte d'Or "Les Louères" 2025 is ideally served chilled, at around 11 to 13°C, in order to preserve its tension and the precision of its aromas. It can be enjoyed young without any particular decanting, to make the most of its freshness.

The Estate
Jean-Charles Fagot now runs this family estate based in Corpeau, in Burgundy, where the Fagot family has been established since 1860. The estate, structured as an EURL since 2014, extends over 3 hectares between Puligny-Montrachet and Chassagne-Montrachet and is now in its third generation of winemakers. Jean-Charles Fagot combines lutte raisonnée viticulture with a négoce-élevage activity, while also running the Auberge du Vieux Vigneron in Corpeau, a natural extension of his work in the vineyard.
The Vineyard
The Bourgogne Côte d'Or "Les Louères" comes from Chardonnay parcels planted on clay-limestone soils typical of the Côte de Beaune. The vines, around 40 years old, are managed using lutte raisonnée and harvested by hand, with a controlled yield of around 45 hectolitres per hectare, favouring the concentration and freshness of the grapes.
Vinification and Ageing
The vinification of the Bourgogne Côte d'Or "Les Louères" 2025 follows a traditional approach, with gentle pressing of the grapes and ageing in large wooden foudres supplemented by barrels, in keeping with the estate's usual practices. This lees work helps develop the wine's creamy texture while preserving its acidic tension.
Grape Variety
This wine is made from Chardonnay.
