Jean-Paul & Benoît Droin : Chablis Village 2022

Usually a benchmark for the appellation, Droin's Chablis has much more density and concentration than the Petit Chablis. More structure and minerality here. Will be very good and a classic example.

Fermented with ambient yeasts in stainless-steel vats. Malo followed by assemblage after 8 to 10 months. Tasted blind. Sleek and flattering – so polished! Really appetising. (JR)
