Color
The color reveals a brilliant golden yellow hue.
Nose
Highly complex, the bouquet opens with stone fruit aromas such as white peach and apricot, underscored by notes of orange peel. With aeration, delicate floral touches of orange blossom and acacia honey emerge, evolving towards nuances of honeysuckle and currants.
Palate
Powerful and full-bodied, the palate offers a slightly unctuous texture carried by a vertiginous precision. It unfolds floral flavors of hawthorn and rose water, mingled with gourmand notes reminiscent of honey and sesame pastries. The finish is energetic, with fine tension and a mouth-watering texture that concludes on a pure minerality evocative of rock water.
Food and wine pairing
In its youth, this white wine pairs beautifully with a sweet onion risotto accompanied by chorizo and grilled peppers. After a few years of aging, it will elevate refined dishes such as poultry with spring mushrooms, as well as fish and seafood.
Service and storage
For an optimal tasting experience, it is recommended to serve Saut de l'Ange 2024 at a temperature of 12°C. This wine has excellent aging potential and can be enjoyed until approximately 2034.

The estate
Founded in 2009, Pierre-Jean Villa quickly established itself as a key reference in France's Rhône Valley. After honing his expertise in Burgundy, Pierre-Jean Villa created his own estate, now spanning 20 hectares. Currently led by its founder, gradually joined by his children Hugo and Pauline, the estate stands out for its deep commitment to respecting the terroir. Certified organic since 2021, the estate is now moving towards biodynamics to produce wines of great authenticity.
The vineyard
The cuvée comes from a distinctive plot within the Saint-Joseph appellation, whose uppermost vines overlook the estate dramatically from the top of a cliff. South to southeast facing, this terroir benefits from a moderate continental climate and rests on light, well-draining soils composed of schist and gneiss over a granite base.
The vintage
2024 was marked by climatic challenges in the region, notably episodes of drought and water stress. Despite these conditions leading to lower yields, meticulous vineyard management enabled the harvest of high-quality grapes, resulting in a balanced and resilient vintage.
Winemaking and aging
The estate's philosophy favors minimal intervention. For Saut de l'Ange 2024, the grapes undergo gentle whole-bunch pressing. Fermentation is triggered exclusively by indigenous yeasts. Aging takes place in oak barrels for a period ranging from 12 to 24 months, accompanied by regular lees stirring to enrich the wine's texture while preserving its aromatic purity.
