Nose
Vibrant in intensity and highly complex, the nose opens with aromas of honeyed grapes and dark fruits such as plum and blackberry. Deep notes of vanilla, toasted coconut, caramel, and milk chocolate intertwine with warm spices like cinnamon, nutmeg, and pepper. A herbal and subtly mentholated touch, a true signature of the distillery, completes this bouquet alongside delicate nuances of tobacco and mature wood.
Palate
The attack is surprisingly smooth, carried by flavors of honeycomb, caramel, and brown sugar. The mid-palate reveals a broad, full-bodied structure where tropical fruits, citrus zest, and peppery, gingery spices intertwine. The oak tannins integrate with great elegance, leading to an exceptionally long finish marked by notes of green apple, butter caramel, woody spices, and a subtle smoky touch.
Pairings and tasting moments
This spirit is best enjoyed neat, served in an appropriate glass. It is recommended to let it rest for a few moments to release its full aromatic volatility. Adding a single ice cube or a splash of water can reveal subtle fruity and caramelized notes while softening the perception of tannins. Founded in 1972 following the merger of the Barnard family operations and Geest Industries, Saint Lucia Distillers embodies the absolute excellence of Rum from Saint Lucia. Located in the fertile Roseau Valley, the distillery benefits from an ideal tropical climate and privileged access to water resources. The Admiral Rodney brand, which pays tribute to the famous British admiral and his tactical victory at the Battle of the Saintes in 1782, is the flagship of this production. Now led by Margaret Monplaisir and owned by Groupe Bernard Hayot (GBH) since 2016, the distillery perpetuates a unique expertise. Recently awarded a Geographical Indication (GI) in 2025, the estate stands out for its expert use of a traditional Coffey still, producing spirits of exceptional aromatic richness, recognized worldwide by discerning enthusiasts.
The meticulous crafting of HMS Formidable
HMS Formidable represents the most accomplished and oldest expression in the permanent range. This exceptional amber rum takes its name from the 98-gun flagship that distinguished itself by breaking the French line during the Battle of the Saintes in 1782.
The production of this Rum is based on a particularly advanced distillation method. Unlike modern industrial practices, the distillery uses a traditional double-column Coffey still, installed in 1985. The distillate is drawn exclusively from the lower plates of the rectification column. This counter-current technique preserves a maximum concentration of congeners and natural aromatic compounds, thus providing a rich base with a complexity worthy of a pot still.
Fermentation, lasting 24 to 36 hours, is carried out using high-quality imported molasses, inoculated with a specific yeast strain (Yeast B) strictly dedicated to aging spirits. Aging then takes place entirely in the island’s tropical climate, an environment that significantly accelerates oxidation and interaction with the wood. HMS Formidable is aged between nine and twelve years in American oak barrels that previously held bourbon. This masterful blend, orchestrated by cellar master Deny Duplessis, gives rise to a spirit of remarkable depth, celebrating with panache naval history and Caribbean craftsmanship.
