Tasting

Appearance
A natural hue ranging between deep gold and light amber, guaranteed without any added caramel.

Nose
Initially somewhat shy, it rewards patience. After a brief aeration, it unfurls a sumptuous lemon cream interwoven with orange blossom and a vanilla of exceptional quality. In the background, indulgent notes of warm apple, diaphanous caramel and gentle spices round out this bouquet of great elegance.

Palate
The attack is expansive and vibrant, dominated by a festival of zesty citrus where lemon, mandarin, pink grapefruit and orange intertwine. This liveliness is wonderfully wrapped in the sweetness of orange honey and a dense, creamy texture. A subtle hint of candle smoke brings a fascinating waxy dimension. The finish, of medium length but impeccable clarity, prolongs the pleasure on notes of light orange, sweet lemon and a delicate vanilla return.

Pairings and tasting moments
This meditative single malt calls for pairings of utmost finesse. It will elevate citrus desserts (lemon meringue tart, orange blossom cake) or white-fleshed fruit desserts such as a spiced apple tart. On the savoury side, it will harmonise beautifully with lightly aged hard cheeses (young Comté, Gouda) or delicate dishes such as pan-seared scallops with an orange reduction. Serve it at room temperature in a tulip-shaped glass, beginning by tasting it neat before adding a few drops of water to release all its aromatic layers.

Mixology
Although its aromatic profile could theoretically inspire sophisticated variations of an Old Fashioned or a Whisky Sour, this exceptional, rare and cask-strength bottling is destined first and foremost for neat tasting. We recommend savouring it without artifice to fully appreciate its complexity and integrity.

Crafted from malted barley, yeast and the pure spring water of the Conval Hills, this single malt was aged for a full 17 years in a single first-fill bourbon cask.
