Nose
An intense and complex aromatic expression. The primary notes of citrus fruit, particularly lemon and orange, preserve the characteristic freshness of rhum agricole. These are intertwined with elegant aromas of toasted wood, spices such as white and black pepper, along with hints of roasted coffee, softened by subtle floral touches, honey, and vanilla.
Palate
The alcohol, at 54.2% ABV, is remarkably well integrated and offers a pleasant warmth without any harshness. The attack reveals the vibrancy of fresh sugar cane, wrapped in a rich, slightly smooth texture. The palate develops flavors of cinnamon, nutmeg, and licorice, before evolving into a fine complexity marked by cocoa, dark chocolate, mint, and delicate mineral notes. The finish is long, dry, and structured, extending the woody spices and pepper while retaining delicate hints of honey.

An Innovative and Warming Amber Rhum Agricole from Carbet
The Estate
Founded in 1931 by Adrien Neisson in Carbet, in the northern Caribbean, the Neisson distillery is one of the last family-owned and independent estates on the island. The estate's history was profoundly shaped by Jean Neisson, a visionary chemical engineer, who introduced long fermentations using indigenous yeasts and installed the legendary Savalle copper column still in 1952. Today, the estate is passionately run by Claudine Neisson-Vernant and her son Grégory Vernant. Fervent defenders of the AOC, they continue a remarkably precise artisanal craftsmanship while committing to sustainable agriculture, with a transition to organic farming initiated in 2013 across their forty-two hectares of sugar cane. Neisson thus embodies the quintessence, authenticity, and prestige of Rhum de la Martinique.
The Spirit
The Profil 105 is a fascinating rhum agricole that challenges aging conventions while adhering to the AOC's strict specifications. Made from pure sugar cane juice grown on the estate's micro-terroirs, this rum undergoes an exceptionally long fermentation, lasting up to one hundred and twenty hours, before being distilled in the historic Savalle column still.
The major innovation behind this amber rum lies in its maturation process, conceived by cellar master Alex Bobi. Unlike traditions that favor ex-bourbon or ex-cognac barrels, the Profil 105 ages for a minimum of two years in new French oak barrels. These barrels undergo a specific, precisely calibrated, and reproducible toasting process, named "Profil 105," developed in close collaboration with an American cooperage. This scientific mastery of barrel toasting results in an aromatic profile that is precise, consistent, and highly elegant, encouraging toasted notes without excessive tannin extraction.
Bottled on-site, this premium spirit also stands out for its committed packaging: it marks a return to the historic deposit-return bottle system, a pioneering eco-friendly practice that the distillery had already introduced back in the 1950s.
