Tasting
Appearance
The wine shows a lovely pale gold hue.
Nose
The aromatic bouquet is complex, blending notes of fresh and candied citrus, peach and almond. Subtle buttery and brioche touches intertwine with a minerality reminiscent of flint.
Palate
Full-bodied with a satiny texture, the palate offers generous flesh perfectly balanced by vibrant acidity. The finish is dense, persistent and elegantly saline.
Food and wine pairing
This white wine pairs wonderfully with white fish in lemon butter sauce, noble shellfish such as lobster or scallops, and white meats served with a creamy mushroom sauce.
Serving and cellaring
For optimal enjoyment, we recommend serving this Saint-Véran Village "Lieu (Inter)Dit" 2025 at a temperature between 11 and 12°C. This wine can be enjoyed until around 2035.

The estate
Founded in 1990 in Sologny by Jean-Marie Guffens and Maine Heynen, Verget stands out as a haute couture négociant house in the heart of Burgundy. Dedicated to showcasing the terroirs of the Mâconnais, the house is distinguished by its absolute commitment to excellence, purchasing high-quality grapes that are vinified in its own winery. Now chaired by JMG Holding, the estate is managed technically and operationally by Julien Desplans, Managing Director. A true laboratory of climats, Verget reveals with precision and passion the singularity of each plot.
The vineyard
This Saint-Véran comes from rigorously selected plots in the village of Davayé. It blends two complementary climats: Les Terres Noires, made up of old vines that bring richness, and the former cadastral lieu-dit Côte Rotie, which imparts great minerality. The vines flourish on ideally exposed limestone slopes, cultivated using a sustainable approach inspired by organic principles, which promotes harmonious ripening of the berries.
Winemaking and ageing
The production of the Saint-Véran Village "Lieu (Inter)Dit" 2025 relies on hand-harvesting and rigorous sorting. To preserve maximum purity, only the free-run juice is kept during a precise pressing. The wine is then carefully aged for around seven months in oak barrels, including a proportion of new wood, which lends it structure and complexity without masking the identity of its terroir.
