Characteristics and Tasting Tips for the Saint-Véran Village "Vieilles Vignes de Saint-Claude" 2025 by Verget
Tasting
Colour
The colour of this cuvée typically reveals a lovely shade ranging from pale yellow to lemon yellow, brightened by golden or greenish highlights.
Nose
The typical bouquet of this wine expresses aromas of white fruit, such as pear and apple, intertwined with delicate floral notes of acacia. Ageing brings subtle touches of sesame, hazelnut and toasted bread, all underscored by a deep limestone minerality.
Palate
Full-bodied and savoury, the palate usually offers a satiny texture, supported by a perfectly integrated acidity. The long, lingering finish stands out for its saline and dried fruit notes, which underline its gastronomic character.
Food and Wine Pairings
This white wine pairs wonderfully with roasted monkfish, fine fish or shellfish. It is also a perfect match for poultry in cream sauce, mushroom risotto, and hard cooked-pressed cheeses such as a young Comté or Beaufort.
Serving and Cellaring
With great potential, this Saint-Véran Village "Vieilles Vignes de Saint-Claude" 2025 can be cellared for up to around 2035.
The Expression of a Great White Terroir of Burgundy
The Estate
Founded in 1990 by Jean-Marie Guffens, Maison Verget is located in Sologny, in the heart of Burgundy. Conceived as a "haute couture négoce", this operation stands out for its exclusive purchase of grapes, allowing complete control over the winemaking. A true laboratory of terroirs, the house showcases the richness of the climats of the Mâconnais, the Chablisien and the Côte d'Or. Today, Jean-Marie Guffens is still at the helm of the estate, closely supported since 2012 by oenologist Julien Desplans, ensuring the continuity of a precise and renowned style.
The Vineyard
The cuvée comes from the Vigne de Saint-Claude plot, located in the commune of Prissé, on the border of the Pouilly-Fuissé terroirs. This vineyard in the Saint-Véran appellation sits at altitude on deep clay-limestone soils covered with gravel. Enjoying an ideal southern exposure, the vines, sixty to seventy years old, are managed using sustainable viticulture, promoting naturally limited yields and a high concentration in the berries.
Winemaking and Ageing
Crafted with great precision, the Saint-Véran Village "Vieilles Vignes de Saint-Claude" 2025 undergoes long fermentations. Ageing takes place in oak barrels, with a measured proportion of around 25% new oak. This process lasts seven to eight months and is accompanied by regular lees stirring, giving the wine its characteristic texture while preserving the tension and minerality of the terroir.
