Tasting
Appearance
The color is an intense red enhanced by delicate violet highlights.
Nose
The aromatic bouquet unveils beautiful complexity with notes of cherries and blueberries, accompanied by floral nuances of violet. Spicy touches of black pepper mingle with subtle smoky fragrances and sweet spices.
Palate
The attack reveals an ample and generous structure, supported by velvety tannins and a beautiful concentration of black fruit. Aging in French oak barrels brings remarkable depth while remaining perfectly integrated, never dominating the fruit expression. The finish is distinguished by its length and elegance.
Service
To fully appreciate the Payen Syrah 2018, it is recommended to serve it at a temperature between 16 and 18°C.

An exceptional Syrah from the Chilean Limarí Valley with a unique limestone terroir
The estate
Founded in 2002 by Guillermo Luksic, Viña Tabali represents the first modern winery in the Limarí Valley, located in the Coquimbo region. The vineyard stretches over 151 hectares distributed between Talinay, just 12 kilometers from the Pacific Ocean, and Río Hurtado, which peaks at an altitude of 1,600 meters. Today managed by Nicolas Luksic, the founder's son, and winemaker Felipe Müller, the estate stands out for its exceptional limestone terroir in Chile, which imparts remarkable minerality and a saline signature to the wines.
The vineyard
Payen comes from the Talinay vineyard, located in the Limarí Valley, in the immediate vicinity of the Fray Jorge National Park, classified as a UNESCO Biosphere Reserve. Planted at an altitude of 150 meters and just 12 kilometers from the Pacific Ocean, this terroir benefits from constant sea breezes making it the coolest site in Limarí, with maximum summer temperatures not exceeding 23.5°C. The soil, composed of fractured and porous limestone, constitutes an ancient marine terrace endowed with a remarkable capacity for water regulation.
Winemaking and aging
Payen Syrah 2018 benefited from careful winemaking where 70% of the grapes were moved by gravity to small stainless steel tanks, while 30% fermented as whole bunches in French oak barrels. Daily pump-overs were carried out during fermentation. The aging of this Coquimbo wine took place over 18 months in French oak barrels, 90% of which were new and 10% third-use.
Blend
This Chilean red wine is the result of a blend of Syrah (93%) and Cabernet Franc (7%).
