40–50% fermented in French oak barrels (aged 6 years on average). The remainder is vinified in small stainless-steel vats. Aged 13–14 months, of which 5 to 6 months on fine lees in French oak barrels for 40 to 50% of the harvest. The end of maturation occurs in small stainless-steel vats. Tank sample. Clean-cut stony citrus, with less obvious creaminess compared with the Montée de Tonnerre. Smells so pure. Likewise on the palate, direct, taut and with just a hint of creamy texture to keep the freshness in balance. (JH)

Colour
A beautiful pale gold hue, this wine stands out with delicate green highlights typical of its youth.

Nose
The aromatic bouquet opens with a lovely intensity of citrus, blending lemon zest, grapefruit and lime, accompanied by notes of crisp green apple. Subtle touches of white flowers and orange blossom intertwine with a pronounced mineral backbone, evoking chalk, oyster shell, flint and iodine, complemented by delicate nuances of white pepper and aniseed.

Palate
On the palate, this wine reveals a structure that is both full and concentrated, supported by a crisp, racy acidity. The texture, silky yet crisp, showcases remarkable mineral precision. The long, persistent finish is marked by a notable chalky tension.

Food and wine pairing

This Chablis 1er Cru "Montmains" pairs wonderfully with fresh oysters, clams or scallops. It also elegantly accompanies grilled white fish or fish served with a light cream sauce, as well as roasted poultry, veal blanquette or goat cheeses.

Service and storage

To reveal its full aromatic complexity, it is recommended to aerate or decant this wine before serving. Built for aging, this Chablis 1er Cru "Montmains" Domaine 2019 will reach full maturity after a few years in bottle and can be enjoyed at least until 2029.

The estate

Founded in 1959 by William Fèvre, the eponymous estate is a key reference in the Chablis appellation, in Burgundy. Spanning approximately 70 hectares, the estate stands out for its pioneering commitment to sustainable viticulture and biodynamics. Under the direction of Didier Séguier since 1998, the estate favors a hands-off approach to allow the authenticity of each terroir to shine through. Since January 2024, the William Fèvre estate has been owned by Domaines Barons de Rothschild Lafite, who continue this philosophy of excellence and environmental respect.

The vineyard

The Montmains climat, located on the left bank of the Serein in Chablis, benefits from a dual southeast and northeast exposure. The estate cultivates 3.68 hectares of vines with an average age of 45 years here. This unique terroir is based on Kimmeridgian marl and clay-limestone soils, rich in marine fossils and oyster shells. This distinctive geological composition, combined with morning sunlight and windy conditions, gives the grapes a slow ripening process, thus preserving the tension and minerality typical of the appellation.

The vintage

2019 benefited from exceptional weather conditions. A mild spring preceded a hot summer, with temperatures ideally moderated by cool nights. Moderate, well-distributed rainfall, followed by an early autumn harvest, allowed the berries to reach optimal phenolic ripeness while retaining good acidity.

Winemaking and aging

The grapes for this Chablis 1er Cru "Montmains" Domaine 2019 are hand-harvested, followed by gravity transfer to preserve the integrity of the berries. After gentle pneumatic pressing and light static settling, alcoholic and malolactic fermentation begin naturally. Aging takes place on fine lees for approximately 14 months, split between stainless steel tanks and French oak barrels averaging six years old (accounting for 40 to 50% of the blend), with no use of new wood. A light filtration precedes bottling.
