Decanter

Rich, warm and long, Fèvre's Bougros has noticeably more power than the fine, elegant premiers crus in 2024. The aromas here range from nectarine to peach and quince; the texture is dense yet lively. The grapes are from the domaine's holdings of more than 4ha – the domaine owns almost half of the climat. The slopes face southwest, and the soil is deeper than the steep Côte de Bouguerots that lines the river.

Tasting

Colour
This white wine from France displays a pale hue, brightened by subtle green highlights that attest to its great freshness and youth.

Nose
The bouquet is rich and deeply mineral. It unfolds aromas of stone fruits such as peach and mirabelle plum, interwoven with notes of green apple, light honey and delicate floral touches. Subtle smoky and briny nuances, reminiscent of gunflint and shellfish, complete this complex aromatic palette.

Palate
The attack is ample and generous, offering remarkable volume that evolves into a dense, enveloping texture. This fleshy, fruity profile is perfectly balanced by a lively acidic tension and a pronounced mineral backbone. The persistent, vibrant finish stretches out on beautiful saline and citrus notes.

Food and Wine Pairings

This great white wine pairs wonderfully with noble fish or shellfish such as lobster, langoustine or scallops, whether grilled or served with a creamy sauce. It also enhances white meats and poultry in sauce, as well as dishes with Asian influences that play on the freshness of ginger and citrus fruits.

Serving and Cellaring

To fully enjoy the Chablis Grand Cru "Bougros" Domaine 2024, we recommend serving it at a temperature between 10 and 12 °C, after allowing it to breathe for fifteen to thirty minutes. With its fine structure, this wine can be cellared and will evolve favourably for approximately ten years.

The Generous, Mineral Expression of a Great Chablis Terroir

The Estate

Founded in its modern form in 1959 by William Fèvre, the eponymous estate is an essential reference in Burgundy. Located in Chablis, the property extends over 70 hectares and stands out as the largest owner of Grands Crus in the appellation. A pioneer of sustainable viticulture, the estate is renowned for its strong environmental commitment and is certified organic. Since January 2024, Domaine William Fèvre has been owned by Domaines Barons de Rothschild Lafite. Under the technical direction of Didier Séguier, the house crafts wines of great purity, faithfully combining minerality and complexity.

The Vineyard

The Bougros climat lies on the right bank of the Serein, within the prestigious hillside of the Grands Crus of Chablis. The vines, some of which have an average age of 60 to 65 years, thrive on south- and southwest-facing slopes. The terroir consists of Kimmeridgian marls, a clay-limestone soil rich in small fossilised oysters that gives the wine its distinctive briny signature. The vineyard is farmed according to organic and biodynamic principles, with dry farming and particular attention paid to local biodiversity.

Vinification and Ageing

The production of the Chablis Grand Cru "Bougros" Domaine 2024 is based on a philosophy that seeks to preserve aromatic purity. Fermentations take place at moderate temperatures, mainly in stainless steel tanks, followed by a complete malolactic fermentation. Ageing continues on the lees with gentle lees stirring. Part of the wine is aged in tanks to maintain tension, while the remainder rests in old French oak barrels to add texture and complexity without marking the wine with woody aromas.
