Tasting

Colour

On the palate, this wine stands out for its suppleness and harmony. Fine tannins structure a juicy palate, dominated by a concentrated core of red berries. There is a perfect balance between pleasant freshness and a graceful finish of lovely persistence.

Food and wine pairing

This red wine pairs wonderfully with delicate red meats, white meats, or characterful fish such as tuna steak. The estate particularly recommends it with duck breast or roast capon. It will also enhance vegetarian dishes such as mushroom risotto or roasted vegetables with Mediterranean herbs.

The estate

Founded in 1920 by Claude Cuilleron, this family estate has established itself as an essential reference in the northern Rhône Valley. Today, it is Yves Cuilleron who leads the estate, having taken over the reins in 1987. Under his visionary leadership, the vineyard has grown from four to around a hundred hectares. A passionate advocate of tailored, low-intervention viticulture, he crafts wines that accurately express the unique character of each terroir. The estate thus embodies French excellence through wines that combine tradition, precision, and respect for the environment.

The vineyard

The grapes come from a two-hectare plot called la Malfondière, located south of Tain l'Hermitage, at the heart of the Crozes-Hermitage appellation. This terroir is characterised by deep, stony soils, with a sandy-loam surface resting on clay-sandy depths. The vines are cultivated using a sustainable approach, without herbicides, with meticulous manual work aimed at preserving the plant's natural balance and health.

Winemaking and ageing

The production of the Crozes-Hermitage "Labaya" 2023 begins with hand-harvested grapes followed by rigorous sorting. After partial destemming, fermentation is triggered by indigenous yeasts in open vats, accompanied by regular punching down and pumping over. Malolactic fermentation then takes place in barrels. Finally, the wine is aged for eighteen months in French oak barrels sourced from several Burgundian coopers, before being fined with egg white and bottled without filtration.
