Description
Characteristics and Tasting Tips for the Years in Cask 24 Years Old Fins Bois 1988 by Bache-Gabrielsen
Tasting
Appearance
A naturally coloured hue, with no added colouring whatsoever. Its vibrant, limpid shade reflects its long years of ageing in Limousin oak casks, further enhanced by an extended rest in demijohns.
Nose
Highly aromatic and deep, it reveals an indulgent core of Madagascan vanilla and nougat. This profile is elegantly enriched by tertiary notes of patinated leather, accompanied by subtle floral and herbaceous nuances reminiscent of herbal tea.
Palate
Smooth, rich and enveloping. It expresses fruity notes of currants and the delicacy of linden blossom, all carried by intense vanilla. The balance is remarkable, offering great drinkability and a silky texture that unfolds at length.
Pairings and Tasting Occasions
The House recommends savouring this exceptional spirit as a digestif, served at an optimal temperature of 25°C. To complement its indulgent character, it pairs wonderfully with lightly sweetened desserts made with dried fruits and nuts, milk chocolate, or a light pastry such as an almond financier. Those who enjoy contrasts can also pair it with small touches of blue cheese to heighten its floral and leather aromas.
Mixology
As this is an extremely rare spirit of exceptional maturity, it is highly recommended to enjoy it neat, without any embellishment, in order to appreciate the full complexity of its aromatic palette.

The House is strongly committed to the environment and aims to reduce its CO₂ emissions by 17% by 2027. Its production approach champions transparency, the use of Limousin oak casks and the extended resting of its oldest eaux-de-vie in demijohns within its precious "Paradis".
The 1988 Vintage: The Pure Expression of the Brie-sous-Matha Terroir
Distilled under the expertise of master distiller Robert Briand, this Cognac has undergone a remarkably precise maturation process. It was first aged for 24 years in Limousin oak casks, developing its structure and aromatic richness, before resting for a further 9 years in demijohns to perfect its harmony.
Bottled in 2013 in a 70 cl format, this exceptional Years in Cask 24 Years Old Fins Bois 1988 spirit is presented in an elegant white case or a "Tradition" gift box. It embodies the range's philosophy of transparency, proudly highlighting its age, its single-plot origin and its natural colour.
