    Description

Tasting notes and serving suggestions for The Gate by Daishichi

    Tasting

    Nose

The nose reveals a generous aromatic palette combining characteristic white floral notes with subtle spicy nuances. Ripe fruit aromas fully express themselves through peach, melon, and raisins, offering remarkable intensity.

    Palate

On the palate, The Gate unfolds a fleshy, velvety viscosity from start to finish. The structure harmoniously combines a firm, elegant acidity with a balanced, complex profile. Flavors evoke juicy, ripe fruits: pears, bananas, and mangoes, accompanied by notes of very ripe yellow fruits, almond cream, and nuts. The finish stands out for its elegant mineral dryness.

    Food pairings and serving occasions

The Gate is particularly well suited to dishes of great finesse and can be served as an aperitif or at the table. This gastronomic sake pairs ideally with sushi, French and Italian cuisine, as well as other creative combinations. It pairs perfectly with naturally sweet-flavored dishes and premium seafood such as oysters, lobster, and crab. For tasting, serve it well chilled, at room temperature, or slightly warmed, in a wine glass to fully appreciate its aromas.

    Mixology

The Gate is an exceptional sake that deserves to be enjoyed without embellishment, to appreciate the full complexity of its blend and the finesse of its traditional craftsmanship.

A gastronomic sake from Fukushima made using the Kimoto method

Daishichi Sake Brewery: more than 270 years of Kimoto tradition in Fukushima

Founded in 1752 in Nihonmatsu in Fukushima Prefecture, Daishichi Sake Brewery perpetuates over 270 years of family expertise. This Japanese sake brewery, now led by Hideharu Ohta, the tenth generation of the Ohta family, stands out for its exclusive commitment to the traditional Kimoto method. Daishichi uses yamada nishiki, the most noble rice variety for sake production. Under the guidance of master brewer Takanobu Sato, the House has modernized its production while preserving ancestral techniques, establishing itself as a benchmark for high-quality traditional sake.

The Gate, an exceptional collaboration between the Daishichi brewery and Xavier Thuizat, Best Sommelier of France 2022

This special cuvée was designed as a unique gastronomic sake, capable of turning every stage of a meal into an emotion-filled moment. The subtle blend of fresh and aged sakes, produced exclusively using the traditional Kimoto method, gives The Gate deep, savory flavors. This ancestral method, renowned for its complexity and demanding nature, allows a natural acidity and remarkable structure to develop. Presented as a limited edition in a 0.72 L format, The Gate embodies the ambitious project of enriching gastronomic experiences around sake, particularly in France, by creating a bridge between Japanese tradition and Western gastronomy.
