An exceptional sake, between tradition and innovation
The estate
IWA sake is a French-inspired initiative. In 2018, Richard Geoffroy, former cellar master of Maison Dom Pérignon, took on a new challenge: creating his own exceptional Japanese sake. Passionate about Japan since 1991, he is convinced that the future of sake extends beyond the archipelago's borders and aspires to give it an international dimension.
Origins and production method
From the Tateyama terroir, in the heart of Toyama prefecture, this exceptional sake is crafted from three rice varieties and five yeast strains. After a meticulous three-week blending process, it rests in bottle for one year before being released. This Junmai Daiginjo, with a polishing ratio of 35%, reveals a rich and structured profile, enhanced by perfect balance and an alcohol content of 15%.
It is one of the rare sakes with aging potential.
