The estate
Founded in 1884, the Midorikawa brewery is a true gem of Niigata Prefecture, in the heart of the former village of Koide in Uonuma City. Renowned for its crystal-clear waters and fertile rice paddies, it embodies time-honored craftsmanship. Under the leadership of Toshiharu Odaira, the fifth generation to head the brewery, Midorikawa upholds a tradition of excellence, prioritizing absolute purity and an unwavering commitment to quality.
Origins and terroir
Uonuma is an exceptional terroir for rice cultivation. Fed by crystal-clear water from local snowmelt, rigorously selected rice varieties give these sakes a unique personality. Each variety brings its own expression, ranging from fruity freshness to deeper, more complex flavors, elevating the balance and elegance of each cuvée.
Production method
Thanks to low-temperature fermentation and carefully controlled aging, Midorikawa sakes reveal highly complex aromas, combining finesse and depth.
