The estate
Founded in 1789 in Miyagi, the Tanaka brewery celebrates over 230 years of expertise in crafting artisanal sakés. Produced using ancestral methods, its sakés stand out for their complexity and aromatic richness, thanks to the work of the finest Toji (master brewers) and the use of exceptional rice. In 2018, a turning point occurred with the arrival of François Chartier, who introduced the art of blending, an unprecedented approach in Japan, allowing for even greater refinement of the balance and depth of these exceptional sakés.
Origins and production
Located in the Kami district, in the heart of Miyagi Prefecture, the Tanaka brewery benefits from an exceptional natural environment. Nestled on the fertile plains north of Tokyo, the region enjoys pure water from melting snow, as well as a cool, humid climate, favored by winds descending from the Ohu mountain range. These ideal conditions contribute to the production of sakés of great finesse and remarkable purity.
This saké is made from carefully polished rice and is enhanced by an alcohol content of 16.5%.
