    The attack is straightforward and dynamic, revealing the characteristic generosity of this warmer vintage. Freshness and minerality harmonize perfectly, punctuated by a distinctive iodine note. A discreet woody note structures the whole, making way for a lively and saline finish of beautiful length.

    The estate
    Villa Baulieu traces its origins back to 1576, when Henry III raised the estate to a fiefdom. Acquired by the Guénant family in 2001, it spans 300 hectares, including 170 hectares of vineyards in the Coteaux d'Aix-en-Provence AOC. Nestled in the crater of the only volcano in Provence at an altitude of 400 meters, this restored 17th-century villa benefits from temperature variations favorable to age-worthy wines. Its unique volcanic terroir and high standards make it unique.

    The vineyard
    The vines for this cuvée thrive on marly clay-limestone soils and benefit from a north/north-east exposure at an altitude of 430 meters in the Coteaux d'Aix-en-Provence appellation.

    The vintage
    The 2019 vintage is characterized by warmer climatic conditions, which have endowed this white wine with a particular generosity while preserving its characteristic freshness and minerality.

    Winemaking and aging
    The winemaking for Villa Baulieu 2019 begins with careful sorting of the grapes on the vine and then on the vibrating table. Pressing is carried out on whole bunches with stems, followed by a slight settling of the must. Fermentation takes place in 40-hectoliter oak tuns, followed by 10 months of aging in the same vessels, imparting roundness while preserving the wine's natural tension.

    This white wine from Provence stems from a harmonious blend of 60% Rolle and 40% Sauvignon, creating a perfect balance between Mediterranean minerality and aromatic vibrancy.
