    One of the domaine’s standout wines, this immediately strikes you with its precision and clarity. Fevre’s vines come from two different sites with varying exposures—one lower down facing southeast, the other higher up on the plateau. Great elegance with plenty of weight and concentration on the palate, full and fleshy. Grapefruit notes to the fore, with plenty of mineral/saline nuances on the long, persistent finish. A delicious, aristocratic grand cru. Fevre owns 2.5ha within Les Preuses.

    The estate

    Founded in 1959, Domaine William Fèvre has established itself as an essential benchmark in Chablis. With 70 hectares of vines, including parcels in six of the seven Grands Crus, it is one of the most significant estates in the appellation. Under the direction of Didier Séguier since 1998, the estate has undergone a major shift toward organic and biodynamic viticulture, favoring the pure expression of terroir. Since January 2024, the estate has belonged to Domaines Barons de Rothschild Lafite, ensuring the continuity of this philosophy of excellence. Certified Haute Valeur Environnementale level 3 as early as 2015, the estate today embodies the pinnacle of quality in northern Burgundy.

    The vineyard

    The Chablis Grand Cru "Les Preuses" comes from one of the seven climat sites classified as Grand Cru within the appellation. This exceptional terroir benefits from Kimmeridgian soils composed of limestone and marine fossils, giving the wines that highly sought-after minerality and distinctive freshness that have made the great crus of Chablis renowned.

    The vintage

    The 2021 vintage in Burgundy was marked by a spring frost episode of rare intensity affecting the entire French vineyard. Despite these challenging conditions, the months that followed allowed the grapes to continue ripening, ultimately offering wines with a classic, fresh profile, true to the identity of the appellation.
