The House
Founded in 1922 by Koichi Nagumo, the Hakkaisan brewery established itself in the Uonuma region, located in Japan’s Niigata Prefecture. For more than a century, this House has upheld the art of premium sake production, drawing on the exceptional climatic and hydrological features of this snowy region. After the founder’s death in 1953, his fourth son, Kazuo Nagumo, took over the brewery at the age of twenty-five, marking a decisive turning point in its development. Today, Hakkaisan stands as one of Japan’s most significant sake producers, internationally recognized for its commitment to quality and innovation while respecting traditional methods.
A delicate premium sake
Sparkling Awa Shiro Koji Itinéraires Collection is a Japanese sake crafted in the Uonuma region, within Niigata Prefecture. This area enjoys a climate particularly well suited to producing high-quality sake, characterized by heavy snowfall that positively influences brewing conditions. Sparkling Awa Shiro Koji Itinéraires Collection is made using the traditional method with a secondary fermentation in the bottle. This technique, similar to that used for prestige sparkling wines, helps develop a fine, elegant effervescence. The use of white koji (Shiro Koji) during the fermentation process is a distinctive feature of this cuvée, giving the sake a distinctive acidity that contributes to its freshness and balance.
