Colour
A deep mahogany hue with great clarity, its viscosity reflects a fine aromatic concentration gained during its tropical ageing.

Nose
Complex and mature, it opens with indulgent notes of honeyed raisins, vanilla and tobacco. Subtle touches of sandalwood and cinnamon bread then enrich this harmonious bouquet.

Palate
The attack offers immediate sweetness marked by brown sugar and crème brûlée, perfectly balanced by dry oak tannins. The mid-palate, light to medium in body, reveals delicately smoky notes, tropical spices and a hint of lemon zest. The moderately long finish extends the pleasure with caramel, mellow oak and cinnamon.

Pairings and Tasting Moments
Ideal enjoyed neat after a meal. This spirit pairs wonderfully with caramelised desserts such as crème brûlée, vanilla pastries, pineapple cakes or dark chocolate desserts with a touch of spice.

Mixology
Although excellent neat, it elevates classic spirit-forward cocktails such as the Cuba Libre (with cola and fresh lime juice), the Rum Old-Fashioned, or tropical fruit punches featuring pineapple and passion fruit.

This Rum from Saint Lucia stands out for its distinctive production method, using a double-column Coffey still. The distillery's environmental commitment and the scientific rigour of its master blender, Deny Duplessis, guarantee spirits of remarkable quality, regularly awarded on the international stage.

The Meticulous Crafting of HMS Princessa

HMS Princessa takes its name from a seventy-gun Spanish ship captured by the British, which fought valiantly at the Battle of the Saintes in 1782. This exceptional amber rum is the result of a highly precise distillation process. Made exclusively from Bonsucro-certified molasses, this rum is distilled in the estate's Coffey column still.

The great distinctiveness of this cuvée lies in the extraction of the distillate. Unlike classic methods, the liquid is drawn off from the lower plates of the rectification column (plates thirty and thirty-two). This bold technical choice makes it possible to capture richer aromas and a superior natural concentration, sacrificing pure alcohol yield in favour of an incomparable depth of flavour.

The final blend, orchestrated with great precision, brings together eaux-de-vie aged between five and nine years under the island's tropical climate. Ageing takes place primarily in American oak barrels that previously held bourbon, lending vanilla and woody notes, complemented by a finishing period in ex-port casks that give the whole a subtle fruity thread and a unique texture. Bottled at forty degrees, this spirit offers a perfect balance between aromatic intensity and approachability.
