    Tasting

    Nose
    The bouquet is at once intense and remarkably subtle. It unveils seductive aromas of white flowers and honey, harmoniously complemented by delicate toasted notes and a fine mineral thread.

    Palate
    On the palate, this wine offers a generous, refined and beautifully chiselled substance. The balance is remarkable thanks to a lovely tension, stretching towards a finish of exceptional persistence.

    Food and wine pairings
    This great white wine pairs wonderfully with noble fish and fine shellfish. It will also sublimate roast poultry or white meats served with a creamy sauce. The estate particularly recommends enjoying it with a roasted John Dory with hazelnuts and chanterelles.

    Serving and cellaring
    To fully appreciate this wine, it is best served at a temperature between 12 and 14 °C. It can be enjoyed in its youth to savour its fruity brilliance, or laid down in the cellar for approximately 5 to 7 years.

    The purity and elegance of a great Beaune terroir

    The estate
    Founded in 1831 in Monthélie, the merchant house Albert Bichot is a true institution in Burgundy. Now led by the sixth generation in the person of Albéric Bichot, the estate has established itself as an essential name combining tradition and sustainable viticulture. The vineyard covers more than 100 hectares spread across six prestigious domaines, from Chablis to Beaujolais. A pioneer in organic viticulture, the house stands out for its profound respect for terroirs and its historic role as a major buyer at the famous Hospices de Beaune auctions.

    The vineyard
    Regarded as one of the greatest terroirs of Beaune, the Climat of Clos des Mouches enjoys optimal sun exposure. The plot under cultivation, covering 0.75 hectare, lies on the upper part of the slope at an altitude of around 300 metres, with an ideal south-south-easterly aspect. The vines, averaging 35 to 40 years of age, flourish on marl soils with a strong limestone dominance. Meticulously tended, this vineyard draws from its singular terroir all the precision and elegance that define this cru.

    Winemaking and aging
    The making of this wine begins with manual harvesting followed by rigorous sorting of the bunches. The grapes then undergo slow, gentle pressing to preserve the full purity of the fruit. Alcoholic fermentation takes place in oak barrels, as does the ageing on fine lees, which extends over 14 to 16 months. To perfect the wine's structure without masking its identity, the proportion of new barrels is carefully calibrated at between 30 and 35%.
