    This Chablis Premier Cru pairs perfectly with fish and seafood, grilled or with a sauce. It also harmonizes wonderfully with poultry and white meats, roasted or cooked in a sauce. For an exceptional pairing, a seafood aumônière is recommended.

    Serve between 11 and 13°C. This wine can be enjoyed young or cellared until approx. 2030.

    A fresh and precise Chablis Premier Cru

    The estate

    Founded in Monthélie in 1831 by Bernard Bichot, the House of Albert Bichot embodies nearly two centuries of Burgundian know-how. Today managed by Albéric Bichot, this family business brings together six estates with a total of over 100 hectares of vines, including 13 hectares of Grand Crus and 26 hectares of Premier Crus. The prestigious Domaine Long-Depaquit in Chablis accounts for 65 hectares. A pioneer in organic farming, the house offers the most extensive range of organic wines in Burgundy.

    The vineyard

    This Chablis Premier Cru stretches over 4.85 hectares on the left bank of the Serein. The vines, which are 46 years old on average, grow on Kimmeridgian marl covered by a thin, predominantly clay layer. The cuvée is created from the blend of several climats of the Vaillons hill, dominated by the more clay-rich Les Epinottes climat, which contributes a beautiful aromatic complexity.

    Winemaking and aging

    The grapes are harvested by hand and then carefully sorted. After slow and gentle pressing at moderate pressure, alcoholic fermentation and aging on fine lees take place over 10 months in stainless steel tanks (90%) and oak barrels (10%, 1 to 5 wines). An additional 2 months of aging in stainless steel tanks completes the process.
