Tasting
Colour
Pale gold with green highlights in its youth, it takes on deeper golden hues as the years go by.
Nose
Delicate, it reveals floral aromas and scents of fresh foliage, all underscored by mineral notes reminiscent of flint.
Palate
Free of any heaviness, it opens with an attack of great purity. The structure is taut, long and delicate, stretching into a persistent finish marked by touches of flowers, hazelnut and dried fruit.
Food and wine pairing
This great white wine is an ideal match for seafood, such as white-fleshed fish and shellfish. It also pairs beautifully with white meats, poultry and characterful cheeses.
Serving and cellaring
The Chablis Grand cru "Les Preuses" Dom. Long-Depaquit 2022 is best served at a temperature of between 11 and 13°C. It can be enjoyed in its youth to make the most of its freshness, or cellared until around 2032. With time, it will develop greater minerality along with tertiary aromas of undergrowth and mushrooms.

The estate
Founded in 1831 in Monthélie by Bernard Bichot, Maison Albert Bichot is a historic institution in Burgundy. Now run by Albéric Bichot, who represents the sixth generation, the family-owned house stands out for its strong commitment to organic viticulture. Based in Beaune, this renowned name extends its reach across six estates of its own, totalling more than 100 hectares of vines. Combining respect for terroir with modernity, the house is also famous for its role as a leading buyer at the prestigious Hospices de Beaune wine auction.
The vineyard
The small 0.25-hectare plot lies within the "Les Preuses" climat, whose name is thought to refer to the old paved Roman road ("perreuse") that once linked Chablis to Maligny. The vines, around ten years old on average, are planted at a density of 8,500 vines per hectare. They thrive on soil composed of clay and abundant stones. The entire estate is farmed according to the principles of organic agriculture.
Winemaking and ageing
Following manual harvesting, the Chablis Grand cru "Les Preuses" Dom. Long-Depaquit 2022 is vinified entirely in oak barrels that have previously held between one and five wines. The wine is aged on fine lees in barrel for 10 months, followed by a further 6 months of maturation in stainless steel tanks.
