    The Estate

    Founded in Monthélie in 1831 by Bernard Bichot, the House of Albert Bichot settled permanently in Beaune in 1912. Under the management of Albéric Bichot, it brings together six Burgundian estates totaling over 100 hectares of vines, including 13 hectares of Grand Crus. A pioneer of organic farming, this Beaune merchant combines historical know-how with the mastery of renowned estates and a vision that remains faithful to the Climats of Burgundy.

    The Vineyard

    The Les Vaudésirs Climat is located in the heart of the Chablis Grands Crus, in the valley of Les Vaudésirs. The vines, with an average age of about 27 years, extend over 2.60 hectares of steep south-facing slopes. The terroir combines clay-limestone soils with a subsoil of Kimmeridgian marl, the geological signature of the Burgundy appellation.

    Winemaking and Aging

    The grapes for the Chablis Grand Cru "Les Vaudésirs" Domaine Long-Depaquit are harvested by hand and then carefully sorted. After slow pressing at low pressure, alcoholic fermentation and aging on fine lees take place over 10 months, 75% in stainless steel tanks and 25% in oak barrels (used for 1 to 5 vintages). Aging continues for a further 6 months in stainless steel tanks.
