    Tasting

    Nose
    Displaying great complexity, the bouquet reveals a harmony of white and yellow fruits, citrus and exotic fruits. Spicy, mineral and subtly buttery touches enrich the whole, with a promising evolution towards indulgent notes of honey.

    Palate
    This wine stands out for its remarkable concentration and perfect balance. Elegance and refinement combine with a beautiful texture, leading to a particularly intense finish of impressive length.

    Food and wine pairings

    This cuvée sublimates noble fish and delicately prepared shellfish. It also pairs wonderfully with foie gras, as well as roasted poultry or white meats, particularly when served with a creamy sauce.

    Serving and cellaring

    To fully appreciate this great white wine, it is recommended to serve it at a temperature between 12 and 14 °C. Blessed with excellent potential, it can rest in the cellar and be enjoyed until around 2033, or even beyond.

    The estate

    Founded in 1831, the Albert Bichot wine house is a true institution in Burgundy. Historically based in Beaune, this prestigious brand relies on its own vineyard of around 106 hectares spread across six exceptional estates. Today, Albéric Bichot, representing the sixth generation, is the current owner and head of the family business. Under his leadership, the house has distinguished itself through a strong environmental commitment, with a conversion to certified organic farming. It is also renowned for its historical role as the main buyer at the famous Hospices de Beaune auctions.

    The vineyard

    The grapes for this Corton-Charlemagne come from a 1.20-hectare plot located in the prestigious Climat of Les Languettes. Ideally exposed to the south-southeast on the Corton hill, the vines, on average 35 to 40 years old, thrive on brown limestone soils resting on Argovian marls. This generous sunshine and singular terroir give rise to white wines that combine great power with exceptional purity and aromatic expression.

    Winemaking and aging

    The process begins with hand harvesting followed by a rigorous sorting of the bunches. Pressing is carried out slowly and gently to preserve the quality of the juices. Alcoholic fermentation takes place in oak barrels, as does aging on fine lees, which extends over a period of 14 to 16 months. To perfect the wine's structure without masking its identity, the proportion of new barrels is carefully measured between 30 and 35%.
