    Decanter

    There is an excellent balance between rich, honeyed notes and very crisp, clean acidity. A stony edge to the finish. This is approachable now but really needs several years. From four parcels, part of the blend is matured in barrel, the rest in tank. Will be bottled in January 2024.

    The 2022 Chablis Mont de Milieu 1er Cru has a backward nose with touches of oyster shell and crustacea, though it is very tightly wound at present. The palate is fresh and sapid on the entry, but it sags on the mid-palate and feels a bit mealy on the finish. I find better Premier Crus from Billaud-Simon in this vintage. Tasted blind at the BIVB tasting in Chablis.

    This is an elegant wine. Gentle, honey-dipped golden apple, bread dough and dried citrus peel aromas fill the nose. A textured roundness opens the palate followed by a touch of tart acidity that is immediately subsumed by a subtle creaminess that carries to the finish.

    The wine displays a pale yellow hue with delicate green highlights.

    Nose

    The nose reveals fresh, mineral aromas with notes of ripe pear, crisp green apple and citrus (lemon, lime). Floral nuances of white flowers accompany a distinctive minerality evoking seaweed and oyster shells, a typical signature of Kimmeridgian soils.

    Palate

    On the palate, the wine shows an elegant, full texture with beautiful typicity. Flavors of fresh citrus mingle with a persistent minerality. The structure is balanced between richness and freshness, supported by lively acidity that brings vibrancy. The clean, dry finish lingers with remarkable length.

    Food and wine pairings

    This Chablis pairs perfectly with oysters and seafood, grilled fish or white fish preparations with citrus. It also accompanies creamy poultry dishes, butter-based preparations and goat cheeses with elegance.

    Serving and cellaring

    The Chablis 2022 Billaud-Simon is ideally enjoyed at a temperature between 50 and 54 °F. This wine can be appreciated now while also having the structure to evolve favorably in the cellar for several years.

    A vibrant and remarkably precise Chablis wine

    The estate

    Founded in 1815 by Charles Louis Noël Billaud after returning from the Napoleonic wars, the Domaine Billaud-Simon now covers 17 hectares of vineyards. Located in Chablis in Bourgogne, this historic estate was acquired in 2014 by the Faiveley family, represented by Erwan Faiveley. Under the direction of winemaker Olivier Bailly since 2014, the estate obtained organic farming certification in July 2025. The estate boasts an exceptional vineyard heritage including four grand crus (Les Clos, Vaudésir, Les Preuses, Les Blanchots) and four premier crus (Montée de Tonnerre, Mont-de-Milieu, Fourchaume, Les Vaillons).

    The vineyard

    This Chablis 1er cru "Mont de Milieu" 2022 comes from approximately 3.17 hectares of vines located in the extension of the Blanchots hill, above the village of Fye. The vines, averaging 50 years of age, grow on the famous Kimmeridgian soils, a geological formation dating back 155 million years composed of limestone, marine sediments and fossilized oyster shells. This unique terroir gives the wines their characteristic saline and iodine-like minerality. The vineyard benefits from a semi-continental climate and lies within a two-kilometer radius around the estate.

    The vintage

    The 2022 vintage in Chablis was characterized by warm and very dry conditions, enabling the harvest of healthy grapes with excellent ripeness while preserving essential acidity. Harvest at Domaine Billaud-Simon took place from September 20 to 26, 2022, a relatively late period consistent with the estate’s philosophy favoring optimal physiological ripeness.

    Winemaking and aging

    This Chablis 1er cru "Mont de Milieu" 2022 is vinified entirely in temperature-controlled stainless steel tanks, with no use of oak, in order to preserve the pure expression of the fruit and terroir. This minimalist approach reveals the characteristic minerality of the Kimmeridgian soils without masking the wine’s natural characteristics with oaky notes.
