    The 2022 Chablis Les Clos Grand Cru has some reduction on the nose, but there is decent fruit underneath, and it just needs time. I appreciate the delineation. The palate is fresh on the entry with exotic fruit: peach, guava and a touch of nectarine, lightly spiced with a cohesive and "correct" finish. It doesn't captivate the imagination, but it will drink well for a decade. Tasted blind at the BIVB tasting in Chablis.

    Colour
    The colour reveals a luminous pale gold hue, enhanced by delicate green highlights.

    Nose
    Wonderfully complex, the nose exudes aromas of white- and yellow-fleshed fruits, such as peach, intertwined with notes of white flowers and honey. A mineral thread marked by flint and a saline touch weaves together with subtle nuances of fresh bread and sweet spices.

    Palate
    Powerful and full-bodied, the palate offers a perfect balance between smooth texture and vibrant acidity. Wonderfully pure, it unfurls a lovely aromatic density before stretching into a remarkably long finish, carried by a persistent salinity and mineral accents.

    Food and Wine Pairing

    This great white wine pairs beautifully with fine seafood such as lobster or crayfish, delicate fish, and poultry served with a creamy sauce. It also enhances mushroom-based dishes, such as a white truffle risotto, or roasted foie gras.

    Service and Storage

    To fully appreciate this Chablis Grand Cru "Les Clos" 2022, it is recommended to serve it at a temperature between 12 and 14°C. This wine can be cellared and enjoyed until at least 2035.

    The Estate

    Founded in 1815, Domaine Billaud-Simon is an unmissable historic figure of Burgundy in France, located in the heart of the village of Chablis. At the helm of a 17-hectare vineyard, the estate stands out for its dedication to the purity and minerality of its wines. Since its acquisition in 2014, the current owner has been Domaine Faiveley, who entrusted operational management to Olivier Bailly. Together, they carry on the excellence of this prestigious name by showcasing exceptional terroirs and steering the estate towards organic farming.

    The Vineyard

    The "Les Clos" climat is the largest of Chablis' Grands Crus. Ideally exposed south-west on the right bank of the Serein, the vines enjoy optimal sunshine. This distinctive terroir rests on a Kimmeridgian subsoil, made up of clay-limestone marls rich in marine fossils. The plot dedicated to this cuvée is located on the upper part of the slope, characterised by particularly stony, limestone-rich soils that favour a crystalline expression. The estate favours mechanical soil work, without resorting to chemical herbicides.

    The Vintage

    The 2022 vintage continues a run of complex climatic seasons for the region, following on from the spring frost episodes of the previous year. Despite numerous weather challenges throughout the growing cycle, conditions allowed the berries to reach optimal ripeness, resulting in a harvest carried out under favourable weather between 20 and 26 September.

    Winemaking and Aging

    After rigorous sorting, the berries destined for the Chablis Grand Cru "Les Clos" 2022 are immediately pressed using a pneumatic press. The must then undergoes cold settling in stainless steel tanks before beginning fermentation. This cuvée is aged half in tank and half in wood, using old barrels to preserve the terroir's mineral identity without masking it.
