    The 7 Crus Extra Brut NV is a 90% Chardonnay and 10% Pinot Noir coming from seven different terroirs and fermented with native yeasts. 60% of this 7 Crus bottling is from 2019 with 40% reserve wines, aged between 24–36 months on fine lees and disgorged 60 days before release with a five-gram-per-liter dosage. Bright, wispy aromas of Spartan apples, nashi pear, brioche, cold butter, and white flowers spill onto a medium-bodied, pristine palate, with a satiny, fine mousse buoying orchard-fruit intensity and soft, radiating acidity to a beautiful, refreshing finish. The bottle tasted was very recently disgorged in September 2023.
