    Alison Napjus

A statuesque Champagne, with creamy viscosity to the mousse as it wraps around a frame of chiseled acidity. Crème de cassis, grilled macadamia nut, warm fig, tangerine peel, pastry cream and candied ginger notes are a rich and finely detailed weave of flavors that glides across the palate. A beauty, echoing fruit, spice and pastry elements, with an underlying streak of salinity on the long, long finish. Drink now through 2048.

The 2008 Dom Pérignon P2 is another sublime Champagne from Dom Pérignon. Long lees-aging on the cork softened the edges that the original 2008 release showed as a young Champagne. The two 2008s (original release and P2) paint two very different but equally compelling potraits of the vintage. The P2 possesses notable textural density and a level of mid-palate intensity that the 2008 does not offer. The P2 is not necessarily better than the original release, but it is quite contrasting in style. It may be that in a very high-quality vintage, extended time in bottle does not add as much as it does in slightly lesser years.

    Description

Characteristics and tasting tips of the Dom Pérignon Plénitude 2 2008

    Tasting Notes

    Color
The color reveals a luminous golden hue.

    Nose
The nose reveals a precise and complex aromatic structure. Notes of candied lemon and bergamot intertwine with aromas of white peach. The bouquet evolves toward nuances of cocoa and roasted coffee, offering remarkable depth.

    Palate
On the palate, this champagne stands out with an architecture built on a framework of acidity wrapped in bitterness and umami. The silky texture brings a vibrant freshness, while the finish lingers on saline and iodine notes. The tactile space proves broader than that of the first Plénitude.

    Food and Wine Pairing
This exceptional champagne pairs perfectly with a citrus-spiked salmon tartare or seafood sushi, highlighting its freshness and saline aromas. A fillet of turbot served with a champagne emulsion will showcase the aromatic subtlety of this cuvée.

    Serving and Cellaring
The Dom Pérignon Plénitude 2 2008 is best enjoyed at a temperature between 10 and 12°C.

A Plénitude 2 champagne of exceptional complexity

    The Estate
Dom Pérignon Champagne was born in 1936, when Moët & Chandon released its first vintage prestige cuvée from 1921, paying tribute to the Benedictine monk Pierre Pérignon of the Abbey of Hautvillers. Owned by Moët & Chandon and part of the LVMH group, the brand stands out for its radical philosophy: only exceptional vintages are produced. Rooted in Épernay, in Champagne, Dom Pérignon embodies absolute excellence in the art of vintage champagne, carrying on the legacy of the visionary 17th-century monk, a pioneer of blending and blanc de noirs.

    The Vineyard
Dom Pérignon's vineyard in Champagne benefits from exceptional terroirs, selected among the region's greatest crus. The plots are located in the most prestigious areas of Champagne, where the soils and exposure yield grapes of remarkable quality, essential to crafting exceptional vintage champagnes.

    The Vintage
The 2008 vintage was marked by unusual weather conditions for the decade. Spring and summer were characterized by grey, overcast skies, with a notable lack of sunshine and warmth. Fortunately, September proved miraculous, bringing blue skies and north-northeast winds. The harvest began on September 15, revealing grapes riper than expected, with exceptional balance and perfect health.

    Winemaking and Aging
The Dom Pérignon Plénitude 2 2008 is the result of nearly fifteen years of cellar aging. This second Plénitude, also known as P2, represents a different expression of the vintage compared to the first Plénitude, which spends more than eight years maturing. This extended aging allows the champagne to develop extraordinary maturity and aromatic complexity, revealing a new dimension of the vintage.

    Grape Varieties
    Chardonnay and Pinot Noir.
