    Tasting

    Colour
    Beautifully concentrated, the deep ruby red colour is immediately captivating.

    Nose
    Complex and expressive, the bouquet opens with aromas of roses and red fruit. It then reveals notes of cooked red fruit, spices, tobacco and vanilla, enhanced by hints of cherry, blackcurrant, mint, earth and black fruit.

    Palate
    Dense and full of energy, the attack offers excellent concentration, with flavours of blueberry and black fruit alongside earthy notes. The finish is long and spicy, supported by a firm tannic structure.

    Food and wine pairing

    This red wine pairs perfectly with full-flavoured meats such as pheasant, grilled duck or lamb roasted with garlic and rosemary. It is also a wonderful match for mushroom or black truffle dishes, as well as mature cheeses such as Époisses, Langres, Comté or Brie de Meaux.

    Serving and cellaring

    With fine ageing potential, this Charmes-Chambertin Grand cru 2019 can be enjoyed from 2025 and will continue to develop gracefully until at least 2030.

    The depth and energy of an exceptional terroir in Burgundy

    The estate

    Founded in 1750 by Simon Verry, Chanson is a historic institution based in Beaune, in the heart of Burgundy. Acquired in 1999 by Société Jacques Bollinger, its current owner, the estate is now run by Thierry Berger. It tends 88 hectares of vineyards spread across the Côte de Beaune and the Côte Chalonnaise. Strongly committed to the environment through its conversion to organic farming, the house also stands out for ageing its wines within the Bastion de l'Oratoire, a 15th-century fortified building.

    The vineyard

    Charmes-Chambertin is the largest Grand Cru in the village of Gevrey-Chambertin. The plots lie mid-slope and benefit from an easterly exposure. This singular terroir rests on a geological mosaic: the lower part of the slope consists of clay-limestone soils, while the upper section reveals Jurassic marl and limestone rich in marine fossils. The vineyard is farmed using precision viticulture, with rigorous plot-by-plot management and practices that respect biodiversity.

    Vinification and ageing

    Between 25 and 50% whole bunches are used during vinification. Malolactic fermentation takes place entirely in barrel on fine lees, without any lees stirring. True to its philosophy of minimal intervention, the estate neither fines nor filters its wines. Ageing lasts 13 to 14 months in oak barrels, with a moderate proportion of new oak (around 30 to 35%), in the bastion's historic cellars.
