The refinement and precision of a red wine from Saint-Émilion
The property
Nestled on the heights of the limestone plateau of Saint-Émilion, the Château Canon enjoys an exceptional location. Located on the right bank of Bordeaux, the superb property takes its name from the famous sailor and privateer of the King, Jacques Kanon. It was in 1954 that Château Canon was crowned Premier Grand Cru Classé of Saint-Émilion.
The vineyard
This reference among the great wines of Saint-Émilion watches over a vineyard of 31.80 hectares whose vines, 30 years old on average, are planted on clay-limestone soils.
The vintage
A mild and wet winter precedes a dry spring, cool in April before a rise in temperatures. Unstable, the summer is marked by a mix of rain and hot days before a sunny autumn and whose cool nights are optimal conditions to refine the maturity of the grapes.
Vinification and aging
Manual harvest in crates. Manual sorting on foot then on sorting tables. Parcel vinification, gravity-fed into thermoregulated stainless steel truncated vats. Gravity flow. Malolactic fermentation (1/3 new barrels, 2/3 vats). The aging lasts 18 to 20 months with 60% new barrels.
