Tasting
Color
Dark red color, clear and bright.
Nose
The aromatic bouquet first opens on intense notes of black cherry and blackberry. After swirling, more complex aromas of blackcurrant are revealed, adding an additional dimension to this wine.
Palate
The attack is frank, followed by a supple and structured volume. The chalky tannins give the wine a beautiful density while preserving its elegance. This vintage stands out for its fruity character and its beautiful length in the finish.
Food and wine pairings
This Moulis-en-Médoc pairs perfectly with grilled red meats, duck breast or even slow-cooked dishes like beef bourguignon. Hard cheeses such as comté or beaufort will also highlight the tannic structure of this wine.
A Moulis wine combining structure with fruity indulgence
The property
Founded in the 18th century, the Château Chasse-Spleen is an emblematic estate of Bordeaux, located in Moulis-en-Médoc. Currently led by Céline and Jean-Pierre Villars-Foubet, the estate stands out for its commitment to sustainable viticulture. The name, inspired by a poem by Baudelaire, and its classification as an Exceptional Cru Bourgeois reinforce its prestige in the Bordeaux landscape.
The vineyard
Spread over 115 hectares, the Château Chasse-Spleen vineyard flourishes on a gravelly and sandy-gravelly terroir resting on a clay-limestone subsoil, characteristic of Moulis. This mosaic of soils gives the wine its complexity and finesse.
The vintage
The year 2024 was marked by contrasting climatic conditions. After a wet spring causing shatter and millerandage, the vineyard had to face significant pressure from mildew, fortunately calmed at veraison. The heat of July and the storms of early September were followed by a hail episode partially affecting the property. Despite these challenges, the harvest revealed an unexpected maturity of the fruits, promising a vintage of character.
Vinification and aging
The grapes of Château Chasse-Spleen 2024 were harvested between September 23 and October 9, depending on the optimal maturity of each grape variety. After a traditional vinification respectful of the fruit, the wine benefited from a 15-month aging in barrels, 40% of which were new wood, allowing to refine its structure while preserving its fruity expression.
Blend
60% Cabernet Sauvignon providing structure and aging potential, 33% Merlot contributing to roundness and fruitiness, and 7% Petit Verdot adding aromatic complexity and spices.
