    Tasting notes

    Colour
    The colour reveals a beautiful, fairly deep red hue that is particularly bright.

    Nose
    Initially discreet with subtle tertiary notes, the bouquet opens up on aeration to reveal delicate floral aromas evoking rose and peony, enhanced by spicy notes of ginger, clove and aniseed.

    Palate
    Full-bodied and wonderfully fresh, the palate seduces with its velvety texture and perfectly integrated, silky tannins. The finish stands out for its serious character and lovely salinity.

    Food and wine pairing

    This red wine will pair beautifully with a fine cut of beef, such as a ribeye or a rib of beef. It will also go very well with duck breast, leg of lamb in sauce, or aged cheeses.

    Service and storage

    For optimal tasting, this Mercurey 1er Cru "Champs-Martin" 2023 should be served at a temperature of between 13 and 14°C, taking care to aerate or decant it beforehand. Ready to enjoy now, this wine can also be cellared until around 2031.

    The elegance and minerality of a Premier Cru from Mercurey

    The estate

    Built in the early 18th century on a rocky outcrop in the Côte Chalonnaise in Burgundy, Château de Chamirey truly began its winemaking history in 1934 with the first estate bottlings. Now run by the fifth generation, represented by Amaury and Aurore Devillard, this 37-hectare estate continues to uphold the region's excellence. The estate stands out for its environmentally responsible approach through sustainable farming, producing wines that faithfully reflect the richness of their terroirs.

    The vineyard

    This wine comes from the "Champs-Martin" climat, a small 0.49-hectare plot located within the Mercurey appellation. Facing due south on a gently sloping terrain, the vines, planted in 2002, benefit from ideal sun exposure. They thrive on a clay-rich, highly calcareous soil crossed by a vein of rock that lends the wine its minerality. The vineyard is managed according to local tradition, with a high planting density reaching 10,000 vines per hectare.

    Winemaking and aging

    The grapes for the Mercurey 1er Cru "Champs-Martin" 2023 are harvested by hand, followed by rigorous sorting and 60% destemming. After a cold pre-fermentation maceration, fermentation begins naturally through indigenous yeasts, accompanied by carefully timed punching down of the cap. The free-run and press wines are kept separate before aging for 15 months in 228-litre oak barrels (20% new oak). The wine then rests for five months in an inert vat before bottling.
