Appearance

Nose
The nose reveals aromas of fresh red fruits dominated by cherry, strawberry and raspberry, accompanied by delicate floral notes of violet. After aeration, the bouquet gains in intensity and complexity.
Palate
On the palate, the wine charms with its elegant balance between roundness and salinity. A silky texture carries fine, well-integrated tannins, while the spicy finish brings persistence and a mineral edge.

The estate
Founded in 1932 in Mercurey, in the Côte Chalonnaise (Burgundy), Château de Chamirey stands as the largest estate in the appellation, with 37 ha on clay-limestone soils, including 15 ha in Premier Cru vineyards and 6 monopoles (notably Les Ruelles and La Mission). A pioneer, it chose, from the outset, to vinify and bottle at the estate. Today, the Devillard family owns it; Amaury and Aurore Devillard run the domaine, pursuing sustainable viticulture and a well-developed wine tourism offering since 2011.
The vineyard
The Mercurey Village "Cuvée Hors Ligne" 2021 comes exclusively from the Les Chavances parcel, spanning 1.15 hectares and planted in 1988. Located at the base of a natural amphitheater, this plot benefits from a distinctive exposure and drainage. The clay-limestone soils, typical of the Mercurey appellation, have a high limestone content that gives the wine its distinctive minerality. The vines, around 33 years old at harvest time, produce concentrated, well-balanced grapes.
Vinification and aging
The grapes for the Mercurey Village "Cuvée Hors Ligne" 2021 are harvested by hand, then hand-sorted before being fully destemmed. A cold soak of 4 to 6 days at 10°C precedes alcoholic fermentation, helping to optimize the berries’ aromatic potential. Fermentation starts naturally at a low temperature before finishing at 30°C, with pump-overs and punch-downs adjusted according to the development of each vat. The aging of this Burgundy wine takes place over 15 months, allowing for a delicate refinement of the wine.
