Nose
The nose opens with fresh red fruit aromas, dominated by ripe strawberry, red cherry and redcurrant, all underscored by subtle floral notes.
Palate
Medium-bodied, the palate offers an elegant structure with refined tannins. The attack reveals a lovely concentration of red fruit supported by a crisp acidity. The mid-palate gains in complexity with delicate mineral and floral touches, leading to a persistent and precise finish.
Food and wine pairing
This red wine pairs ideally with light red meats, poultry such as duck or goose, as well as herb-grilled meats. It also complements mushroom-based dishes, roasted vegetables and medium-intensity creamy cheeses beautifully.
Service and storage

Today, the property is run by the second generation, Caroline and Mathias Parent. They carry on the estate's identity by favoring the authentic expression of terroir and sustainable viticulture. With a vineyard spanning several prestigious appellations, the estate is renowned for its wines of great finesse.
The vineyard
Although classified as Vin de France, this wine is crafted from a meticulous blend of grapes sourced from multiple Burgundian terroirs. The estate cultivates its vines according to sustainable practices, prioritizing soil management, yield control and the preservation of biodiversity to ensure the highest quality fruit.
The vintage
2023 delivered generous yields under relatively warm growing conditions. These temperatures were nonetheless tempered by cooler summer months, allowing the berries to retain lovely acidity and great aromatic freshness at harvest.
Winemaking and aging
The winemaking of the "Signature Mathias Parent Domaine" 2023 includes partial whole-bunch fermentation to enhance aromatic complexity and texture while preserving freshness. The wine is then aged for twelve to fourteen months in French oak barrels, approximately 20% of which are new, providing structure without masking the brightness of the fruit. The wine undergoes minimal filtration before bottling.
