    Tasting

    Appearance
    This red wine reveals a brilliant, clear ruby colour with beautiful transparency.

    Nose
    The aromatic bouquet opens with generous notes of red and black fruits, reminiscent of cherry, raspberry and plum. It is then enriched with nuances of undergrowth and cedar, along with delicate mineral and spicy touches.

    Palate
    The palate stands out for its freshness and silky texture. Carried by lovely acidity and remarkably fine tannins, it offers a mouth-watering, crystalline character that extends into a precise and elegant finish.

    Food and wine pairing

    This cuvée pairs wonderfully with a fine cut of beef, a vegetarian tagine with raisins, or a platter of soft cow's milk cheeses.

    Serving and cellaring

    To fully appreciate this Bourgogne Hautes-Côtes de Beaune "Altitude" 2024, it is recommended to serve it at a temperature between 15 and 16°C. It can be enjoyed now or cellared to be savoured until around 2032.

    Domaine Boris Champy: biodynamic excellence from high-altitude terroirs in Burgundy

    The estate

    Founded in 1984 by Didier Montchovet in Nantoux, at the heart of Burgundy, the estate quickly established itself as a regional pioneer by obtaining the first Demeter biodynamic certification. In 2019, winemaker Boris Champy took over the property, which was renamed Domaine Boris Champy. Drawing on his international experience, the current owner continues this demanding environmental philosophy. Spanning around twelve hectares, the vineyard is dedicated to showcasing microclimates and cool terroirs, producing authentic, easy-drinking wines that reflect the purity of their origin.

    The vineyard

    The grapes for this Bourgogne Hautes-Côtes de Beaune come from two high-altitude plots, En Bignon and Le Clou. These vines, around 35 years old, thrive on a mosaic of soils combining clay over hard limestone and stony white limestone over yellow marl. Farmed biodynamically with high planting density, the vineyard benefits from various training methods, including lyre pruning, promoting optimal ripeness and great freshness.

    The vintage

    The year was marked by extreme weather conditions, with heavy rainfall and a lack of sunshine leading to significant disease pressure and reduced yields. However, a welcome return of the sun in September allowed the berries to reach excellent ripeness, resulting in a concentrated and rich harvest.

    Winemaking and ageing

    Following hand-picked harvesting and rigorous sorting, the winemaking for this Bourgogne Hautes-Côtes de Beaune "Altitude" 2024 favours gentle extraction. It incorporates 50% whole-cluster fermentation and takes place in wooden foudres. The wine then undergoes a measured ageing period of around twelve months, including 15% new oak barrels, in order to preserve the brightness of the fruit and the finesse of its structure.
