    Tasting

    Colour
    This white wine reveals a clear yellow hue, ranging from pale to medium gold. It is illuminated by subtle green highlights and stands out with a brilliant clarity.

    Nose
    The aromatic bouquet opens with notes of ripe stone fruit, such as pear and golden apple, refreshed by touches of citrus reminiscent of lemon and grapefruit. With aeration, delicate scents of white flowers such as acacia and honeysuckle mingle with a pronounced minerality reminiscent of flint, all wrapped in subtle nuances of butter, brioche and vanilla.

    Palate
    The attack is generous and textured, offering a beautiful balance between richness and structure thanks to fine tannins. The mid-palate unfolds concentrated flavours of pear, stone fruit and light exotic touches, supported by a mineral backbone and perfectly integrated acidity. The finish, remarkably long, lingers on fruity, mineral and finely oaked notes.

    Food and Wine Pairing

    This white wine pairs wonderfully with noble shellfish such as lobster, langoustines or scallops, particularly when served with a creamy sauce. It also enhances white meats, such as chicken in cream sauce or rabbit with tarragon, as well as foie gras and mature goat's cheeses. For bolder pairings, it will perfectly accompany spiced dishes such as tagine, couscous or even sushi.

    Service and Storage

    Approachable in its youth, this Pouilly-Fuissé Village "Vieilles Vignes" 2023 has a fine structure that allows it to evolve favourably in the cellar. It can be enjoyed until around 2030, although the best storage conditions could extend its longevity by more than a decade.

    The Authentic Expression of a White Burgundy Terroir by Domaine Cordier Père et Fils

    The Estate

    Founded in 1945 in the village of Fuissé, in the heart of the Mâconnais region in Burgundy, Domaine Cordier Père et Fils is now run by Christophe Cordier. This perfectionist winemaker oversees a 31.5-hectare vineyard spread across a mosaic of more than 120 plots. Deeply committed to environmental stewardship, the estate favours working the soil with a draft horse and achieved organic certification in 2024, while also applying biodynamic principles to reveal the purest expression of its terroirs.

    The Vineyard

    This Pouilly-Fuissé comes from old vines averaging 60 years of age, planted close to the village of Fuissé. Resting on very stony clay-limestone soils of Jurassic origin, these plots benefit from a prime south to south-east exposure. The estate practises demanding viticulture here, with very low yields limited to around 20 hectolitres per hectare, along with meticulous canopy management, including a specific braiding technique to protect the grapes from intense summer heat.

    The Vintage

    The year 2023 stood out for its particularly warm and sunny weather conditions, punctuated by rainfall arriving at just the right moments. This ideal climate encouraged optimal vine growth and allowed the berries to reach perfect physiological and phenolic ripeness. The harvest therefore took place early, between the end of August and the beginning of September.

    Winemaking and Aging

    The grapes are hand-harvested at optimal ripeness, then received by gravity to preserve the fruit. After gentle pressing, the juices ferment using indigenous yeasts. The Pouilly-Fuissé Village "Vieilles Vignes" 2023 is aged on full lees for 12 months in 350-litre French oak barrels, followed by an additional 6 months in large wooden foudres. During this period, precise automated lees stirring is carried out. Finally, the wine is bottled by gravity, without fining and with very light filtration.
