The estate
Founded in 1945 in Fuissé, Domaine Cordier Père et Fils is a Burgundian family estate currently managed by Christophe Cordier. The estate spans 35 hectares spread over more than 120 plots across 9 villages in the Mâconnais. Specializing exclusively in white Chardonnay, it stands out for its commitment to organic and biodynamic farming, certified AB since the 2024 harvest and Demeter since 2024. The estate has two air-conditioned gravity-fed cellars and practices exacting viticulture with manual harvesting and intentionally limited yields.
The vineyard
The "En Faux" climat is located near the village of Chasselas in the Saint-Véran appellation, at an altitude of 270 to 300 meters. Facing due south, this terroir presents a distinctive clay-limestone composition characterized by a notable presence of iron oxide, giving the soils a brick color. The vines were 40 to 50 years old for the 2020 vintage. Yields are kept between 30 and 40 hectoliters per hectare, well below the average for the Saint-Véran appellation.
The vintage
The year 2020 in Burgundy began with a mild winter followed by a spring marked by frost episodes. A mild and dry June preceded a hot, sunny summer with relatively little rain, favoring optimal grape ripening.
Winemaking and aging
The harvest for the Saint-Véran Village "En Faux" 2020 is carried out manually at optimal maturity. After gentle whole-cluster pressing, the wine is barreled by gravity. Fermentation takes place exclusively with indigenous yeasts. Aging is divided into two phases: 12 months in 350-liter barrels on lees, followed by 6 months in stainless steel vats, totaling 18 months. Bottling is done by gravity, without fining and with extremely light filtration.
