    The wine reveals a deep, dark red hue, reminiscent of burlat cherry, enhanced by delicate luminous highlights.

    Nose
    With great elegance, the aromatic bouquet opens with intense notes of black fruits such as blackcurrant and cherry, mingled with touches of plum and licorice. With aeration, more complex nuances of undergrowth, chocolate, roasted herbs and a hint of menthol emerge.

    Palate
    Round and supple, the palate offers a mouthwatering texture supported by remarkably fine, perfectly integrated tannins. The fruity expression is balanced by lovely vibrancy and a menthol freshness, giving this wine a harmonious and easy-drinking finish.

    Food and wine pairing

    This red wine pairs wonderfully with grilled meats, flank steak or refined dishes in sauce. It will also enhance lamb-based preparations or game meats such as wild boar, duck, pheasant or venison.

    Service and storage

    To fully release its complexity, it is recommended to open or decant Collioure "Montagne" 2023 from Domaine de la Rectorie about an hour before tasting, and to serve it at a temperature between 16 and 18°C. Approachable now, this wine has excellent aging potential and can be enjoyed until around 2039.

    The elegance and freshness of a great red wine from Roussillon

    The estate

    Founded in 1984 by brothers Marc and Thierry Parcé, Domaine de la Rectorie is a major reference in Roussillon. Located in Banyuls-sur-Mer, the estate spans around thirty hectares split into small plots. A pioneer in the production of dry wines on the Vermeille coast, the estate is now run by Thierry Parcé and his son Jean-Emmanuel, who joined in 2010. Backed by a centuries-old family heritage, they continue to uphold a philosophy respectful of the terroir, favoring limited yields and an artisanal approach to reveal the authenticity of their landscapes between sea and mountain.

    The vineyard

    This red wine from Collioure comes from high-altitude plots, situated between 200 and 400 meters, benefiting from an ideal north-facing exposure to preserve the freshness of the berries. The terroir is composed mainly of fractured schist soils, dotted with clay-limestone elements and quartz, forcing the roughly fifty-year-old vines to root deeply. Cultivated according to the principles of sustainable farming and the ancestral method of complantation, the vineyard benefits from the moderating influence of the Mediterranean Sea and local winds, such as the Tramontane, ensuring optimal vine health for exclusively hand-harvested grapes.

    Winemaking and aging

    After careful destemming, the winemaking process for Collioure "Montagne" 2023 from Domaine de la Rectorie begins with maceration lasting around twenty days, allowing for a gentle extraction of aromas and color while preserving tannic finesse. Aging then takes place over 12 to 14 months, combining large wooden foudres with small French oak barrels, to add complexity without masking the brightness of the fruit.

    Grape varieties

    This wine is a blend of Mourvèdre (50%), Grenache Noir (30%), Carignan (10%) and Counoise (10%).
