The estate
The Domaine de la Taille Aux Loups, located in the picturesque Loire Valley, is an icon of French winemaking. Founded in 1989 by the bold and visionary Jacky Blot, the estate overturned the winemaking conventions of the region. With his pioneering spirit, Jacky Blot challenged traditional methods by introducing avant-garde techniques and focusing on the purity and authenticity of the terroir. His approach, combining respect for the land with innovation, redefined the potential of Chenin Blanc, showcasing the complexity and finesse of this grape variety. Under his leadership, Domaine de la Taille Aux Loups became synonymous with exceptional wines that capture the very essence of the Loire Valley.
His son, Jean-Philippe, joined the estate and gradually took over its management a few years before Jacky Blot passed away in May 2023.
The vineyard
The Taille Aux Loups vineyard enjoys a temperate climate and clay-limestone soils, ideal for growing Chenin Blanc, Cabernet Franc and Sauvignon Blanc. The estate's geological diversity allows its wines to express themselves in a unique and varied way, doing full justice to the richness of the Loire.
The wine
Produced in the Montlouis-sur-Loire Pétillant appellation, the Brut Tradition from Domaine de la Taille Aux Loups is made from young interplanted vines as well as vines under 20 years old, growing on soils of clay, silica and limestone.
Vinification and ageing
The grapes are harvested by hand and sorted before pneumatic pressing. The juice is transferred into barrels by gravity. Slow fermentation takes place without added yeast or chaptalisation. The first fermentation ends at between 7 and 8 grams of sugar. The liqueur de tirage is adjusted to between 16 and 18 grams for the second fermentation in bottle. Disgorgement takes place after around 20 months of ageing sur lattes, followed by the addition of the liqueur d'expédition (4 to 6 grams per litre).
